How to make a Rooibos Punch

This recipe brings out the unique vanilla sweetness of the Rooibos, with the strawberries then further emphasising its rich, red-fruit notes. The result is surely Iced Tea’s answer to a non-alcoholic punch, so feel free to add more fruit if you fancy it.

What you need

*Makes approx 10 drinks

  • 1.5l boiling water

  • 10 Rooibos tea bags or 25g Rooibos loose leaf

  • 100ml sugar syrup

  • 100ml lemon juice (approx 4 lemons)

  • 10 strawberries, hulled and cut into quarters

  • A handful of basil leaves

  • Ice


    Method

    Prepare your tea

    • Bring 1.5l freshly drawn, filtered water to the boil

    • Pour over the Rooibos tea

    • Allow to infuse for 10 minutes

    • Strain the leaves or remove the tea bags

    • Set aside to cool

    • Add the sugar syrup and lemon juice

    • Give it a good stir to combine

    • Refrigerate until ready to serve (up to 3 days)

    To serve

    • Prepare a glass with plenty of ice and chopped strawberries

    • Add the tea base - if you are able to shake in a cocktail shaker before serving, it will create a lovely froth, but not essential!

    • Garnish with a basil leaf
