How to make a Rooibos Punch
This recipe brings out the unique vanilla sweetness of the Rooibos, with the strawberries then further emphasising its rich, red-fruit notes. The result is surely Iced Tea’s answer to a non-alcoholic punch, so feel free to add more fruit if you fancy it.
What you need
*Makes approx 10 drinks

1.5l boiling water

100ml sugar syrup

100ml lemon juice (approx 4 lemons)

10 strawberries, hulled and cut into quarters

A handful of basil leaves

Ice
Method
Prepare your tea

Bring 1.5l freshly drawn, filtered water to the boil

Pour over the Rooibos tea

Allow to infuse for 10 minutes

Strain the leaves or remove the tea bags

Set aside to cool

Add the sugar syrup and lemon juice

Give it a good stir to combine

Refrigerate until ready to serve (up to 3 days)
To serve

Prepare a glass with plenty of ice and chopped strawberries

Add the tea base - if you are able to shake in a cocktail shaker before serving, it will create a lovely froth, but not essential!
