How to make Hibiscus, Rhubarb & Strawberry Iced Tea

There isn't long until the rhubarb will be gone again for the year (indeed you'll already have to look hard for it unless you were clever and stocked up your freezer!) so with the sunshine finally out there's no time to be lost in making some of this delicious iced tea - one of our all-time favourite summer drinks. 

What you need (per drink)

  • 3 Hibiscus tea bags / 4 tsp of Hibiscus tea leaves 

  • 1 litre of (filtered) water

  • 1 tbsp honey

  • 3 sticks of rhubarb

  • Approx 350g Strawberries, hulled & chopped in half

  • Plenty of ice
    Method

    - Add the chopped rhubarb to 1 litre of water in pan and bring to the boil, simmering for 5 - 8 mins until soft.

    - Take off the heat and add 3 Hibiscus tea bags (or around 8g / 4 teaspoons Hibiscus leaves) to the pan and infuse for 10 minutes.

    - Strain all the liquid into a heatproof jug, stir in the honey and allow to cool.

    - To serve, prepare a jug with ice and chopped strawberries, pour over the tea & muddle to release the sweetness in the strawberries.

    - Serve by the glass.
