How to Make Darjeeling & Elderflower Iced Tea
Makes 2 drinks
This recipe is one we turn to time and time again, and you may even tried it from the tea van at a summer festival as we serve it every year. Darjeeling is a great tea to cold brew, thanks to the uniquely aromatic character of the tea, and coupled with the elderflower it is simply delicious. If you've missed the window to cold-brew the tea ahead of time, not to worry - hot brewed Darjeeling will work too. Simply allow it to cool a little before serving, or be sure to use plenty of ice and muddle it well straight away to chill the liquid (vs just letting it melt slowly and dilute the drink).
What you need
- 3g Good & Proper Darjeeling
- 500ml cold, ideally filtered water
- Cold Brew Bottle, or any resealable bottle
- 25ml Elderflower Syrup per serving
- Lemon
- Ice
Method
Prepare your tea:
- Measure the Darjeeling tea leaves into your bottle
- Fill the bottle with cold, filtered water
- Place the lid on and flip it once to ensure all the leaves are submerged
- Leave to infuse in the fridge overnight (approx 15 hours)
- Taste - if it needs more body, leave to infuse for a bit longer. The infusion time is very slow here, so it's hard to overdo it.
To make the drinks:
- Fill your glasses with plenty of ice
- Add elderflower cordial to each (adjust for sweetness)
- Divide the cold-brewed tea between your two glasses
- Give it a good stir
- Garnish with a slice of lemon
