How to make a Rooibos 'Bitter Red' Cocktail with Botivo

Last month we sat down with cocktail-craftsman and founder of Botivo, Sam Paget-Steavenson (aka The Rum Runner), to find out more about their beautiful, handcrafted, non-alcoholic aperitif, why they resonate with our own approach to sustainability and why Doing Things Properly matters to them. As newly converted Botivo drinkers ourselves, we naturally couldn't wait to find the perfect ingredients to create a Good & Proper cocktail. After experimenting with a variety of our teas, we all settled on a firm favourite, the newly-named 'Bitter Red'. Our Rooibos brings out a gentle sweetness in the naturally bitter Botivo, drawing out the flavour of the raw honey (from the Local Honey Man) - a hero ingredient in Botivo. 

Makes 1 Bitter Red

What you'll need:

-25ml Botivo
-100ml strongly brewed Rooibos
-10ml lemon juice
-3 slices cucumber
-Ice to shake & serve

Method:

Prepare your tea ahead of time, using one teabag or 3g Rooibos leaves for 100ml water - you want it nice and strong, so brew for up to 10 minutes, then strain. Add all the ingredients to a shaker and shake for 10 seconds. It needs to be a good shake to ensure you extract all the flavour from the cucumber, as well as combine the flavours evenly.

Strain and serve over ice. Enjoy!
